- 500 g Ground beef
- 3 Eggplants
- 4 Onions
- 3 garlic cloves
- 350 g tinned peeled tomatoes
- 200 g Feta
- Olive oil
- Salt
- Pepper
- Preheat your oven to 200°C (th.6-7). Cut the aubergines in half lengthwise, and place them on the oven rack. Bake for 1 hour, turning the aubergines after 30 minutes.
- Meanwhile, peel and finely chop the onions and garlic. Heat a tbsp. olive oil in a pan, and toss the onions and garlic until browned on all sides. Turn off the heat after 5 to 10 minutes and cover.
- Once the aubergines are cooked, keep the oven on at 200°C. Empty the eggplants by hollowing them out with a fork.
- For their flesh into the bowl of a blender, then add the ground beef, onions and garlic, tomato pulp, and a tablespoon of olive oil.
- Salt, pepper, and mix a few moments.
- Cut the feta into small cubes and add it to the preparation.
- For the mixture into a baking dish and bake for 45 minutes. You can also sprinkle the dish with breadcrumbs, or decorate it with eggplant slices before putting it in the oven.
- Serve with mashed potatoes and a rocket salad.
