Baeckeoffe with fish

- 600 g Salmon fillets
- 600 g Monkfish tail
- 1.5 kg Potatoes
- 6 Leeks
- 3 Carrots
- 1 red pepper
- 1 shallot
- 2 garlic cloves
- 4 bay leaves
- Coriander (a little)
- 2 tbsp. Herbes de Provence
- 1 lemon juice
- 30 cl Almond milk
- 1 Bottle of dry white wine
- 1 tbsp. tablespoons olive oil
- Salt
- Pepper
- Cut the fish into cubes.
- Put them in a container and cover with lemon juice.
- Peel the potatoes and cut them into slices.
- Wash the leeks and carrots well and cut them into rings.
- Cut the bell pepper into strips.
- Peel and mince the shallot.
- Squeeze the garlic cloves.
- Put the olive oil in a pot.
- Arrange half of the vegetables: a layer of potatoes, leeks, carrots and peppers.
- Lay out half of the fish pieces.
- For over the almond milk.
- Add a little shallot, garlic, two bay leaves, a tablespoon of Provence herbs and a little coriander.
- Add salt and pepper.
- Make another layer of vegetables then fish and finally herbs and shallots.
- When all the ingredients have been arranged, gently for over the white wine.
- Close with the lid then bake for 2 hours at 160°C.
