Chicken and avocado burger

- 4 Burger buns
- 300 to 400 g Leftover chicken
- 1 Large avocados
- 1 small red onion
- 1 handful arugula
- 1 Lemon
- 0.5 Tomato
- 1 garlic clove
- 3 tbsp. Mayonnaise
- Salt
- Pepper
- Grate the lemon zest. Take the flesh of the avocado and mash it with a fork with a squeeze of lemon juice and the pressed garlic.
- Add salt and pepper. Add the seeded and diced tomato.
- Toss leftover chicken with mayonnaise and lemon zest.
- Reheat the buns for 3 minutes in the oven. Top them with the arugula, chicken, thin slices of onion and mashed avocado. Serve immediately.
