Chicken meatballs – mint and sun-dried tomatoes

- 350 g Chicken breast
- 5 Pieces of sun-dried tomatoes
- Mint leaves
- 2 eggs
- 60 g Flour
- Salt
- Pepper
- 8 Savory biscuits (aperitif biscuits)
- Cut the chicken breast into cubes and coarsely chop in a blender.
- Add the dried tomatoes previously cut and chop again.
- Put the mixture in a container.
- In the blender, chop the mint leaves then add them to the previous mixture.
- Mix well with your hands to obtain a homogeneous preparation.
- In another container, mix the eggs with the flour, salt and pepper then add to the minced meat.
- Let the mixture rest in the fridge for about 30 minutes.
- In a bowl, coarsely grind the crackers to obtain a powder.
- Make balls with the meat mixture then roll them in the cracker powder.
- Heat a little oil in a frying pan and cook the meatballs for about 4 to 5 minutes on each side.
- As an accompaniment, I suggest you prepare semolina, zucchini (steam for my part) as well as a small sauce of fresh tomato simply mixed in order to dip the meatballs in it:) a delight!!
