Leek and salmon flan

- 4 slices smoked salmon
- 4 Leeks
- 4 eggs
- 20 cl fresh cream
- 50 g Butter
- 1 tbsp. cornstarch
- 1 tbsp. Old fashioned mustard
- 1 tbsp. cider vinegar
- 1 tbsp. tablespoon Rapeseed oil
- Salt
- Pepper
- Clean the leeks then rinse them well. Slice 2 leeks and cook them without coloring in 30 g of butter. Butter 4 ramekins. Preheat the oven to th. 5 (150°C).
- In a bowl, beat the eggs with the cornstarch. Salt, pepper. Incorporate the cream and finally the cooked leeks. Divide the mixture into the ramekins and bake for 30 minutes.
- Steam the remaining leeks.
- In a bowl, mix the mustard with the vinegar and oil. Salt, pepper.
- Unmold the flans and present them with the steamed leeks, smoked salmon and mustard sauce.
