Pan-fried rabbit with two olives

- 4 rabbit legs
- 4 tomatoes
- 2 red peppers
- 1 green pepper
- 2 onions
- 4 garlic cloves
- 50 g pitted black olives
- 50 g pitted green olives
- Herbs of Provence
- Lemon juice
- 1 tbsp of honey
- Salt
- Pepper
- 6 tbsp olive oil
- Wash and seed the peppers... cut them lengthwise into thin strips.
- Peel and cut the onion into thin rings. Peel and finely cut into strips.
- Wash and seed the tomatoes then cut them into thin slices. Cut the olives (black and green) in half.
- Melt the onions and the garlic cloves in a frying pan - with the olive oil. Once nicely browned... add the strips of peppers.
- Season.
- Add the tomato slices, then the olives.
- Bone the rabbit legs - cut into pieces. Place the pieces of meat in the mixture... add honey and lemon juice.
- Sprinkle with Herbes de Provence.
- Bake for about 1 hour 15 minutes.
Serve with rice or mash.
