Prawns and rice noodles with coconut milk

- 1 pepper
- 200 g Coconut beans
- 16 prawns
- 300 g Rice noodles
- 1 Lime
- 2 tbsp. tablespoon soy sauce
- 1 tbsp. tablespoons nuoc mam sauce
- 40 cl coconut milk
- 2 tbsp. tablespoons Oil
- Shell the prawns and keep them cool.
- Bring a large pot of water to a boil. Cook the noodles for 2 minutes less than the package directions, to keep them very firm.
- Drain them, refresh them under cold water and set aside.
- Remove the small seeds from the bell pepper and cut it into small dice.
- Heat the oil in a wok. Place the coconut beans in it, heat them for 2 minutes, then for in the coconut milk.
- Add the lime juice, nuoc-mâm, soy sauce and diced pepper. Cover and simmer on low for 10 mins.
- Add the noodles and prawns to the wok. Mix well and cook again for 5 minutes, this time uncovered.
- Serve immediately.
