Spiced sweet potato pancakes

- 2 fairly large sweet potatoes
- 1 egg
- 6 tbsp. Flour
- 50 g grated Gruyere cheese
- 0.5 chorizo (strong (or mild according to taste))
- Paprika powder
- Salt
- Pepper
- oil for cooking
- Peel the sweet potatoes, cut them into cubes and boil them in water. Once cooked, drain and coarsely mash them with a potato masher or a fork, keeping a few pieces.
- Incorporate the whole egg and the flour in three times. Salt and pepper, add the paprika and the grated Gruyère cheese as well as the chorizo cut into cubes (more or less according to taste, I added a little less than half of my chorizo).
- Heat a drizzle of oil in a non-stick pan, for a good tablespoon of the preparation and slightly flatten the top to give a rounded shape.
Cook for about 5 minutes on each side over medium/low heat until the patties are golden brown. Sprinkle with a little fleur de sel before serving.
