Roasted chicken with morels

- 1 chicken of 2.5 kg (with its offal)
1 White pudding with morels - 1 kg small potatoes
- 4 shallots
- 2 Onions
- 1 garlic clove
- 2 sage leaves
- 30 g Dehydrated morels
- 80 g Butter
- 2 tbsp. peanut oil
- Salt
- Pepper
- Rehydrate the morels. Preheat the oven to th. 6 (180°C). Peel and chop the onions and garlic. Fry them in the pan, in the oil.
- Dice the sausage and offal. Add them to the pan with 1/3 of the morels, the sage, salt and pepper. Let cook for 2 minutes. Fill the poultry with this preparation. Close the opening and bake for 2 hours, basting regularly.
- Peel the potatoes. Peel and mince the shallots. Heat the butter in a casserole, add the potatoes with the shallots and the rest of the morels. Cook gently, stirring regularly. Turn off the heat when the potatoes are tender.
- Serve the cut chicken and its stuffing accompanied by the pan-fried potatoes.
