Chicken stuffed with white pudding

- 1 Poulard
- 300g white pudding
- 1 carrot
- 1 onion
- 2 shallots
- 2 pippin apples
- 1.5 kg Pumpkin
- 1 large floury potato
- 1 sprig of rosemary
- 100 g semi-salted butter
- 1 egg
- Salt
- Pepper
- Peel the carrot, onion and shallots. Slice them and melt them in 20 g of butter. Remove the skin from the sausage and chop it.
- In a salad bowl, combine the sausage with the steamed vegetables, the chopped rosemary, the whole egg, salt and pepper.
- Mix, stuff the chicken and sew it up with kitchen twine.
- Preheat the oven to th. 6 (180°C). Bake the chicken for 1 hour 30 minutes, basting it regularly with the cooking juices.
- Cut the pumpkin into quarters, remove the seeds. Peel the potato. Peel, core the apples and cut them into large chunks. Steam vegetables and fruits. Mash them into a purée, add the remaining butter and season.
- Serve the chicken cut into pieces, accompanied by the stuffing, mashed potatoes and juice in a sauce boat.
