Baked fish with mustard sauce

- 4 fresh mackerels (prepared by the fishmonger)
- 20 cl fresh cream
- 2 tbsp. tablespoon mustard grains
- 1 tbsp. tablespoons olive oil
- 4 sprigs of thyme
- 1 Lemon
- Salt
- Pepper
- Preheat the oven to 220°C.
- Rinse the mackerel under running cold water then pat them dry on absorbent paper. Slip the sprigs of thyme inside, salt and pepper them.
- Oil a baking dish with olive oil. Place the mackerels in the dish.
- Wash and dry the lemon, remove the zest and squeeze the juice. In a bowl, combine the zest, juice, cream and mustard.
- Season with salt and pepper then spread this sauce over the mackerels.
- Bake for 20 minutes, serve hot.
