- 6 garlic cloves
- Olive oil
- Salt
- Pepper
- Peel and degerm the garlic cloves. Crush them in a mortar until you get a fine puree.
- Then add olive oil very gradually, in a thin stream, without ceasing to mix vigorously. The aioli will gradually thicken.
- Occasionally pause in adding oil to continue whisking briskly, then resume. When the aioli is firm and the whisk or pestle can fit straight into it without falling back, it's ready.
- Salt and pepper the aioli to your liking, and garnish with chopped herbs.
