Chickpea balls with almonds and spinach

- 1 can of chickpeas (400 g drained)
- 75 g Whole almonds
- Previously soaked in water for at least 2 hours
- 1 red onion
- 3 handfuls fresh spinach leaves
- 1 tbsp. tablespoon Almond puree
- 1 tbsp. lemon juice
- 1 ramekin of ground almonds for the breadcrumbs
- Frying oil
- Salt
- Pepper
- Wash, dry and chop the spinach.
- Peel and cut the onion into strips.
- Mix the chickpeas with the onion and the rinsed and drained almonds.
- Add the lemon juice.
- Add the spinach, season and mix.
- Form golf ball sized balls.
- Roll them in the ground almonds then fry them for a few minutes.
- N.B: Cooking can be done in the oven at 180°C, in an oiled dish, but your meatballs will be less crispy.
