Financiers with walnut oil and crunchy apples

- 200g Flour
- 200g Icing sugar
- 1 tbsp. brown sugar
- 4 egg whites
- 75g Butter
- 20 g For the mussels
- 3 granny smith apples
- 0.5 Lemon
- 50g ground almonds
- 150 g Walnut kernels
- 4 tbsp. tablespoon Walnut oil
- 1 pinch Salt
- Preheat the oven to th. 7 (210°C).
- Brown the walnut kernels in a nonstick skillet. Let cool. Chop 50 g of walnuts.
- Mix the flour with the icing sugar, the ground almonds, the 50 g of walnuts and the salt.
- Add the egg whites then mix by incorporating the melted butter and walnut oil.
- Butter financial plates or use silicone hens (no need to butter then) and fill the prints three-quarters full.
- Bake for 5 mins then continue cooking for 10 mins. 6 (180°C). Unmold the financiers and let them cool on a wire rack.
- Wash the apples and, without peeling them, core them and dice them. Sprinkle them with lemon juice.
- Mix them with the remaining walnuts and brown sugar.
- Serve the financiers with the apple salad.
