- 500 g Potatoes
- 400 g haddock fillets
- 0.5 granny smith apple
- 10 cl Cream
- 50 g semi-salted butter
- 0.5 Lemon
- 0.5 Bunch of chives
- Salt
- Pepper
- Cook the potatoes for 7 minutes in a microwave oven at full power (or otherwise in a hand truck).
- Meanwhile, rinse the haddock fillets. Cook them in the steamer basket.
- Bring the cream to a boil in a small saucepan. Over very low heat, add the very cold butter in pieces, working with a whisk.
- Season this sauce with a squeeze of lemon.
- Peel and coarsely mash the potatoes with a fork. Add salt and pepper. Incorporate the grated half-apple, the shredded haddock and the sauce. Serve hot, sprinkled with chives.
