Ingredients

- 1 large can of peeled (and chopped) tomatoes
- 1 red pepper
- 1 white onion
- 4 eggs
- 1 tbsp. mocha cumin seeds
- 1 tbsp. 1/2 tsp chilli powder
- 2 tbsp. tablespoons olive oil
- 2 sprigs of coriander
- Salt
- Pepper
- Remove the first skin from your onion and chop it.
- Wash your pepper, cut it in 2, remove the stem, remove all the seeds and all the white ribs then cut the flesh into small dice.
- In a skillet, sauté the onion in the oil with a little salt over high heat for 3 minutes, taking care to stir constantly.
- Add the diced peppers and continue cooking for 5 minutes.
- Crush the cumin into grains in a mortar.
- Add the crushed tomatoes and the spices then continue cooking for 20 minutes over low heat.
- Crack your eggs into the pan, then bake at 180°C for 5 minutes.
- Decorate your dish with chopped cilantro.
