Sweet potato huevos rancheros

- 1 large can of peeled (and chopped) tomatoes
- 1 dozen cherry tomatoes
- 0.5 Sweet Potato
- 1 carrot
- 1 white onion
- 4 eggs
- 4 tbsp. tablespoon canned red beans
- 1 tbsp. coffee Cumin powder
- 1 tbsp. 1/2 tsp chilli powder
- 2 tbsp. tablespoons olive oil
- Salt
- Pepper
- Peel the carrot, cut it into slices. Peel the sweet potato. Dice it.
- Put a pot of water to boil and cook the carrot and sweet potato until cooked but still a little firm.
- Drain and reserve.
- Peel the onion and chop it. In an ovenproof skillet, fry the onion in the oil with a little salt over high heat for 3 minutes, taking care to stir constantly.
- Add the carrot and sweet potato pieces and continue cooking for 5 minutes.
- Add the crushed tomatoes, the cherry tomatoes, the beans and the spices, then continue cooking for 20 minutes over low heat.
- Crack your eggs into the pan, then bake at 180°C for 5 minutes.
