Quick Greek Salad

- 1 Cucumber
- 5 Tomatoes
- 1 white (or red) onion
- 2 small green peppers
- 15 0g Feta
- 10 black olives
- 0.5 Bunch of fresh coriander
- 0.5 Bunch of fresh mint
- 1 handful blanched almonds
- 2 tbsp. tablespoons olive oil
- 2 tbsp. tablespoon wine vinegar
- Salt
- Pepper
- Wash the tomatoes and cut them into quarters.
- Peel the cucumber and cut it into slices. Do the same for the onion.
- Remove the stalks from the peppers, peel them with a vegetable peeler, then remove the seeds and cut them into pieces.
- Make a vinaigrette with olive oil, vinegar, salt and pepper.
- Toss the vegetables with this vinaigrette and divide them among the plates.
- Serve with slices of feta as well as chopped black olives, mint and cilantro.
- Garnish with almonds.
