Easter starter mimosa egg with crab

- 6 eggs
- 1 Yellow
- 1 tbsp. coffee Mustard
- 1 tbsp. Heavy cream
- 1 Lemon
- 15 cl Sunflower oil
- 2 tbsp. tablespoons olive oil
- 1 can of crabmeat
- 1 shallot
- 1 bunch of green asparagus
- 4 tbsp. tablespoons Grated parmesan
- 12 sprigs of chives
- 4 sprigs of chervil
- Salt
- Pepper
- Immerse the 6 eggs for 10 minutes in a large saucepan of boiling water. Add the asparagus 5 min before the end of cooking.
- Pass the eggs and asparagus under cold water. Peel the eggs, cut them to ¾ of their height with a knife and carefully collect the yolks.
- In a large bowl, mix the mustard, egg yolk, cream, lemon juice, salt and pepper. Mix and add the sunflower oil in a drizzle with a whisk until the mayonnaise becomes firm. Book cool.
- Peel the asparagus. Place them on a baking sheet lined with baking paper and drizzle with olive oil. Sprinkle with parmesan and bake for 5 minutes.
- Mash hard-boiled egg yolks with a fork. Add the drained crab meat, mayonnaise, shallot and chopped herbs. Salt, pepper. Fill the egg whites with the crab stuffing. Serve the mimosa eggs with the asparagus.
