Goat cheese salmon quiche

- 1 shortcrust pastry
- 3 slices smoked salmon
- 70 g Fresh goat cheese
- 3 eggs
- 20 cl Liquid fresh cream
- 0.5 Bunch of chives
- 1 pinch Espelette pepper
- Salt
- Ground pepper
- Preheat your oven to 200°C (th. 6-7). Dice the salmon. Wash the chives and chop them.
- In a bowl, beat the eggs into an omelet. Add the fresh cream, chives and Espelette pepper. Salt, pepper, and mix well.
- Unroll the dough in a pie pan and prick the bottom with a fork. Place the salmon on the bottom and cover with the egg mixture.
- Crumble the goat cheese on top of the quiche and bake for about 35 minutes.
Tip: Enjoy hot or warm with a salad of baby spinach.
