Jig of venison roasted with quinces

- 1.2 kg Roe deer jig
- 1 drizzle of olive oil
- 20 cl Veal stock
- 3 Quinces
- 2 star anise
- Preheat the oven to th 7 (210°C).
- Peel and cut the quinces into quarters. Immerse them in a large volume of salted boiling water for 20 minutes.
- In a baking dish, place the venison jig. Salt, pepper and for in the olive oil.
- In the bottom of the dish, for the veal stock.
- Spread the pieces of quince and bake for 45 min. Taste the meat very hot with the pieces of quince, covering with sauce.
