For the buckwheat dough:
- 100 g Fluid flour
- 100 g Buckwheat flour
- 100 g Soft butter
- Salt
- Water

- Preparation of the dough: in a mixing bowl, mix the flours and the salt.
- Add the soft butter cut into small squares.
- Stir the butter into the flour until you get a sandy mixture.
- Once this is obtained, add water gradually until you obtain a homogeneous and smooth paste. The amount of water is not intentionally indicated because it will depend on the butter (more fat, less water and vice versa).
- Buckwheat flour needs more water than regular wheat flour to coagulate. Add enough water to be able to form a homogeneous ball of dough, without it crumbling.
- Reserve 30 minutes in the fridge.
- Preheat the oven to 180°C.
- Once the dough has rested, roll it out on a floured work surface or on parchment paper then cut to the size of the mould. I recommend the second option, the buckwheat dough is not so easy to spread, pieces could remain stuck to the work surface with the first option.
- Line the dough in a pie pan, prick the dough with a fork and cover with aluminum foil or parchment paper.
- Place baking beads or pulses on top (dried beans, lentils, etc.) to prevent the dough from rising during cooking.
- When the oven is hot, bake the dough for 15 minutes.
- When it becomes very lightly golden, remove from the oven. It just needs to be precooked.
- Preparation of the filling: once washed and freed from the large green stems, cut the leek into rings.
- Cook in a skillet over low heat with a drizzle of olive oil. Be careful, it must not burn. To book.
- Cut the sun-dried tomatoes into squares. To book.
- In a bowl, beat the egg in an omelette and add the milk. To mix together.
- Add the parmesan, spices, cooked leek and dried tomatoes to the previous mixture.
- For the mixture over the pre-cooked dough.
- Add parmesan shavings on top to make it gratin then sprinkle with pumpkin seeds for decoration.
- Once the oven is at 180°C, bake for 20 minutes. The pie is ready once the filling is golden brown.
