For the choux pastry:
- 140 g Flour
- 110 g Butter
- 5 Eggs
- 10 cl Milk
- 1 tbsp. tablespoons bitter cocoa
- 1 tbsp. Sugar
- 0.5 tbsp. salt
For garnish :
- 220 g 70% cocoa chocolate
- 40 cl Whole liquid cream
- 1 tbsp. powdered sugar
- 20 g Butter
- The day before, prepare the whipped cream. Chop 80 g of chocolate in a bowl.
- In a saucepan, boil the cream with the sugar.
- Pour 1/3 of the liquid over the chocolate while stirring. Add the rest in two batches.
- Whisk 1 min. Reserve 12 hours in the refrigerator.
- The same day, preheat th. 7 (210°C). Prepare the choux pastry.
- Sift the flour with the cocoa. Bring the milk with 15 cl of water, the butter, the sugar and the salt to a boil.
- Add the cocoa-flour mixture and mix vigorously for 2 minutes until the dough forms a ball and comes away from the walls.
- Off the heat, add the eggs one at a time.
- Using a pastry bag, place walnut-sized balls of dough on a buttered baking sheet. Bake 20 mins. Let cool.
- Whip the chocolate cream until you get whipped cream.
- Cut the cabbage in half and garnish with whipped cream.
- Melt the remaining chocolate.
- Place the choux on a wire rack and coat with chocolate. Let cool before serving.
