Christmas brioche with the Magimix Cook Expert

- 1 packet dry baker's yeast
- 125 ml Milk
- 20 g Soft butter
- 4 g fine salt
- 40 g Powdered sugar
- 250 g T55 flour
- 1 egg
- In the bowl, put the yeast with the milk, and launch the BREAD/BRIOCHE programme. After 1 minute, the program stops: add the diced butter, salt, sugar, flour and restart the program by pressing Auto. If necessary, fold* the dough with the spatula at the end of the program and restart for 15 seconds. Take the dough (it should be sticky) and place it in a floured bowl, then let it rest for 30 minutes, covered with a damp cloth.
- Preheat the oven to 60°C (th. 2). Place the dough on a floured work surface, divide it into three equal portions and shape* three long pieces* by rolling them with your fingertips. Add flour from time to time if the dough starts to stick. Glue the top end of the three dough pieces* together, braid them and place the braid in a buttered cake tin, then place it in the oven and let rise for 30 minutes.
- Remove the brioche bread from the oven then increase the temperature to 180°C (th. 6). Break the egg and beat it in a bowl then brush the brioche bread with it with a brush, so that it is golden brown. Bake it for 20 minutes. If it browns too much, cover it with aluminum foil.
- Leave to cool a little before unmolding.
- Serve the warm brioche cut into slices.
- Accompany with foie gras and fig chutney sprinkled with fleur de sel and stripped thyme.
