- 550 + 70 g Flour
- 30 cl milk (+ for the glaze)
- 125 g sultanas
- 6 cl Water
- 55 g cold butter
- 55 g Brown sugar (+ for the icing)
- 1 egg
- 1.5 tbsp. salt
- 1.5 tbsp. Cinnamon
- 0.5 tbsp. four spice coffee
- 0.25 tbsp. coffee Nutmeg
- 1 sachet Baker's yeast
- Neutral oil
- Cut the butter into very small cubes, place it in the bowl of the bread machine then add the flour (550 g) and the salt.
- Sand with your fingers to incorporate the butter.
- Add brown sugar, cinnamon, allspice, nutmeg and baker's yeast in that order.
- Warm the milk, add the beaten egg and for into the bowl of the bread machine.
- Put on dough mode (about 1 hour 10 minutes).
- Once the time has elapsed, degas the dough and add the raisins.
- Divide into 8 or 10 dough pieces (depending on your preference).
- Oil a dish or baking sheet and place the dough pieces on it.
- Let rise in a warm place, covered with a tea towel for at least 30 minutes.
- Preheat the oven to 180°C.
- After the second push, brush with a little milk and sugar mixed together to make a glaze.
- Prepare the device for the crosses by mixing 70 g of flour with the water.
- Place in a food bag (freezer bag type) and cut a very small piece of the angle.
- Be careful, it must not flow too quickly.
- Draw crosses on each piece of dough.
- Bake for 25 minutes then let cool before serving and enjoy!
