Wonderful tomato gazpacho, watermelon, basil
Ingredients
Instructions
For 10 bowls:
- 1/8 regular sized watermelon (about 1.2 kg)
- 10 to 12 medium-sized tomatoes (here, vine tomatoes)
- 1 block of feta
- A pinch of Espelette pepper
- Olive oil
- Basil
- Salt
- Cut the watermelon, the tomatoes in four and deseed them.
- Put everything in the blender or in the food processor.
- Add a pinch of Espelette pepper and a good pinch of salt then mix.
- Store everything in the fridge to serve chilled.
- Cut the feta, the basil and set aside.
- When ready to serve, arrange the gazpacho in the bowls and add a drizzle of olive oil, the small cubes of feta and the basil.
- Pepper and serve!
Note: I really like adding olives.
The feta can be replaced by mozzarella or small pieces of goat cheese.
