Rice with green asparagus and salmon

- 4 salmon steaks
- 1 onion
- 300 g round rice
- 16 green asparagus
- 80 cl of water
- 1 tbsp. olive oil
- Salt
- Pepper
- Peel and finely chop the onion. Cut the lower part of the stem of the asparagus and remove the small leaves. Dice the salmon.
- Bring 80cl of salted water to the boil and cook the asparagus for 5 minutes on a gentle simmer.
- Collect them with a slotted spoon, the cooking water will be used to cook the rice.
- In a large sauté pan, heat the olive oil and brown the salmon. Reserve it.
- Add the onion and sauté until browned.
- Add the rice and cover it just up with the asparagus cooking water, salt and pepper.
- Cover and cook for 10 minutes, stirring occasionally.
- Cut the asparagus in half lengthwise then into 2cm sections.
- Add the salmon and asparagus to the sauté pan and continue cooking for 2-3 minutes without covering.
- Adjust the seasoning if necessary.
