Chinese steamed dumplings

For the dough :
- 80 g Wheat starch
- 20 g Potato starch
- 1 tbsp. tablespoons Sunflower oil
For the stuffing :
- 200 g Ground pork
- 1 white leek
- 2 fresh onions
- 2 cm of fresh ginger
- 0.5 Bunch of coriander
- 3 tbsp. tbsp soy sauce
- Ground pepper
- In a bowl, mix the starches, then add 9 cl of hot water all at once. Knead the dough, cover the bowl and leave to rest for 10 minutes.
- Wash and dry the leek and coriander, peel the onions and ginger.
- Chop the leek and onions finely, chop the coriander and grate the ginger.
- In a salad bowl, mix the pork with the onions, leek, coriander, ginger and soy sauce. Add pepper. Mix well and keep cool.
- Add the oil to the rested dough then knead it on a floured work surface: it must be soft and homogeneous.
- Cut the dough into 2 equal parts, roll them into a ball then crush them with the palm of your hand. Gently roll out each disc of dough, trying to make them as thin as possible.
- Use a cookie cutter to cut them out.
- Place a little filling in the center of the discs of dough, then close them by pleating the top with your fingers.
- In a steamer basket, lined with perforated parchment paper, place the ravioli then place them in boiling water for 10 to 15 minutes, until they become transparent.
- Enjoy them with a drizzle of soy sauce.
