Mexican omelet

- 6 eggs
- 1 small can of corn
- 200 g Paris ham
- 3 Onions
- 1 small carrot
- 1 stalk of celery
- 1 small hot pepper
- 1 tbsp. Cornmeal
- 5 cl Milk
- 4 sprigs of parsley
- 4 tbsp. tablespoons olive oil
- Salt
- Pepper
- Rinse the corn kernels and drain them.
- Peel the onions and chop them. Peel the carrot and grate it.
- Trim the celery stalk and cut it into small dice. Clean and chop the parsley.
- Slice the ham into thin strips.
- In a large bowl, beat the eggs in an omelet with a fork, salt and pepper them.
- Add the milk, cornmeal, finely minced chilli and chopped parsley.
- Mix and set aside.
- Heat the oil in a large pan and add the onions to sauté.
- As soon as they become translucent, add the corn, celery, carrot and strips of ham.
- Cook, stirring gently, for 6 to 7 minutes over medium heat.
- Turn up the heat and for the omelet into the hot pan.
- Using a spatula, bring the still liquid eggs from the edge to the center, distribute the ingredients evenly, lower the heat, cover the pan and cook for 3 to 4 minutes.
- Slide the omelet onto a hot serving platter and serve immediately.
