Beef « tears of the tiger »

MARINATED BEEF:
- 500 g sirloin of beef
- 2 tbsp. at s. soy sauce
- 1 C. at s. honey
- Salt
- Pepper
SAUCE :
- 1/2 bunch of mint
- 1/2 bunch of cilantro
- 1 lime
- 1 clove of garlic
- 3 tbsp. at s. Nuoc mam sauce
- 1 C. at s. soy sauce
- 3 tbsp. at s. brown sugar
- 3 tbsp. at s. water
- 10 drops of Tabasco
ACCOMPANIEMENT :
- 1 small batavia
- Cut the beef into strips. In a hollow container, drizzle them with soy sauce and honey. Add salt and pepper.
- Leave to marinate for 1 hour at room temperature.
- Take 4 tablespoons of rice and brown it in a dry pan, stirring constantly.
- Once nicely browned, remove it to a plate to let it cool, then reduce it to powder, in a food processor or with a pestle.
- Rinse, dry and finely chop the mint and coriander.
- Mix them with the lime juice, add the degermed and minced garlic, the Nuoc mam sauce, the soy sauce, the brown sugar, the water and the Tabasco.
- Rinse and dry the batavia.
- Cook the beef strips in the pan.
- Line the plates with salad. Place the meat on top. Drizzle with sauce and sprinkle with toasted rice powder.
