Carrot Chicken Parmentier

- 400g Potatoes
- 400 g Chicken breasts
- 400 g Carrots
- 1 onion
- 1 garlic clove
- 2 tbsp. tablespoons olive oil
- 20 g Butter
- 10 cl Liquid cream
- 1 ball of mozzarella
- 3 sprigs of parsley
- Salt
- Pepper
- Peel and wash the potatoes. Cut them into pieces. Do the same with the carrots and cook everything in salted water for 20 to 25 minutes, until the vegetables are tender. Put them in the vegetable mill with the butter and the lukewarm cream. Salt, pepper and set aside.
- Cut the chicken breasts into cubes or strips. Peel and mince the onion and garlic.
- Heat 1 tablespoon of oil in a fry pan and fry the onion. Add the chicken strips and brown them on all sides. Add the garlic and continue cooking for 2 to 3 minutes.
- Preheat the oven to 200°C (th.6/7).
- Arrange the chicken in a gratin dish and cover with mashed potatoes. Add the sliced mozzarella on top.
- Bake for 10 to 15 mins. Drizzle with the remaining oil, sprinkle with chopped parsley and serve.
