- 3 slices of wholemeal bread
- 40 g Emmental cheese from Savoie
- 1 small zucchini
- 1 egg
- 1 tbsp. olive oil
- dried thyme
- salt pepper
For the radish sauce:
- 6 radishes
- 50 g 20% MF cottage cheese
- 1 tbsp. chopped shallot
- 1 tbsp. chopped chervil
- Cut the Emmental cheese into strips. Harden the egg in a saucepan of boiling water, 9 min.
- Wash the zucchini, remove the ends and cut it into slices (with the skin).
- Heat the oil in a small skillet over medium heat and brown the zucchini slices with a pinch of thyme. Salt.
- Prepare the sauce. Cut the stems off the radishes and scrape them off. Blend them in a food processor with the shallot, chervil, fromage blanc, salt and pepper.
- Drain the egg, then peel it and coarsely mash it with a fork.
- Spread 2 slices of bread with the radish sauce. On the first, arrange half of the cheese strips, half of the zucchini slices and the hard-boiled egg.
- Cover with the 2nd unspreadable slice, then arrange the rest of the zucchini, cheese and egg. Cover with the 3rd slice spread with sauce.
