Duck breast with rhubarb

- 2 duck breasts
- 420 g rhubarb
- 3 shallots
- 20 g ginger
- 14 cl white wine
- 4 tbsp. sugar
- 3 tbsp. olive oil
- 2 tbsp. tablespoons tomato puree
- 1 C. maple syrup
- 1 C. balsamic vinegar
- Salt pepper
- Finely chop the shallots. Fry them in an oiled frying pan, making sure they don't brown.
- Meanwhile, peel the rhubarb and cut it into small chunks.
- Add 300 g of rhubarb and the ginger to the pan.
- Allow to sweat for 5 minutes while stirring regularly. Add the wine, sugar and tomato puree and mix thoroughly.
- Cover the pan and simmer over medium heat for 15 minutes.
- Brown the remaining rhubarb in an oiled pan. Add maple syrup and season to taste.
- Cover the pan and simmer over medium heat for 20 minutes. At the end of cooking, add the balsamic vinegar and mix gently to preserve the appearance of the rhubarb.
- While our rhubarb is simmering, let's cook the duck breasts!
- Heat a non-stick pan and place the duck breasts skin side down. Grill for 6 mins.
- Place the duck breast in an oven dish and bake at th.3 (80°C) for 40 min.
- Remove the duck breasts from the oven, cut them into slices and place them hot in a serving dish.
- Coat them with the rhubarb sauce and accompany them with pieces of rhubarb in maple syrup. Treat yourself !
