- 4 potatoes
- 4 eggs
- 2 red peppers
- 4 garlic cloves
- 1 onion
- 1 drizzle of oil
- Chive
- Salt pepper
- Wash the peppers, and cut them in half lengthwise.
- Remove the seeds and the white parts.
- On a baking sheet covered with parchment paper, place the peppers and pour the oil over them. Bake for 12 min at th.5-6 (170°C).
- Meanwhile, mince the garlic and onion.
- Peel the potatoes, wash them and cut them into thin slices.
- In a large skillet, sauté the garlic and onion until the onion becomes transparent then add the potatoes.
- Cook for 15-20 mins until tender.
- Once the potatoes are cooked, fill the peppers with them.
- Put the peppers back in the oven for 20 minutes. At the end of this cooking time, break an egg on each pepper and bake again until the eggs are cooked.
- Sprinkle with chopped chives and serve.
