
Fillets of red mullet and artichokes with curry

- 8 red mullet fillets with their skin
- 4 Breton artichokes
- juice of 1 lemon
- 1 onion
- 25 cl fresh cream
- 1 tbsp. tablespoon curry + 2 pinches
- 4 tbsp. olive oil
- salt pepper
- Strip the artichokes completely, remove the hay to keep only the funds.
- Sprinkle them with lemon juice. Heat 4 tbsp. tablespoons of olive oil in a saucepan, add the artichoke bottoms and the juice.
- Cover and cook for 10 minutes over medium heat. Book.
- Fry the red mullet fillets in a frying pan and hot olive oil for 2 minutes on the skin side and 1 minute on the flesh side, over moderate heat.
- Set aside and replace them with the chopped onion.
- When the onion is nicely browned, add the fresh cream, curry and sliced artichoke bottoms.
- Serve the artichoke bottoms and their sauce on four plates, add the red mullet fillets and sprinkle with curry powder.
