Fried sardines

- 500 g Sardines
- 2 eggs
- 2 tbsp. Flour
- 2 Lemons
- 15 sprigs of parsley
- 1 bay leaf
- 50 cl Oil
- Salt
- Pepper
- Scale the sardines with the blunt side of a knife blade or simply wipe them from the tail to the head with paper towel.
- Split the ventral part, then gut the sardines, but keep them whole.
- Rinse them quickly, salt them and let them drain in a colander.
- Break the eggs on a plate, add the flour, beating with a fork: the batter should be liquid and without lumps. Salt, pepper.
- Heat the oil in a skillet. Throw in the bay leaf. Dip the sardines in the batter, so that they are completely covered. Immerse them by two or three in the frying bath.
- Let them cook for 3 or 4 minutes. When they are nicely browned, remove them with a slotted spoon and place them on absorbent paper. Do it two or three times.
- Then immerse the sprigs of parsley in the frying bath for 8 to 10 seconds.
- Drain them on absorbent paper. Salt them.
- Arrange the sardines in the serving dish. Garnish with fried parsley sprigs and lemon wedges. You can also accompany them with olives.
