
Gourmet Stuffed Rabbit Saddle

- 2 good saddles of free-range rabbit
- 50 g sausage meat
- 50 g minced veal
- 50 g good quality chorizo, finely diced
- 1 tablespoon olive oil
- 1 finely chopped shallot
- 1 tea cup bread crumbs soaked in milk
- 1 egg
- salt pepper
- bacon bards
- Bone the saddles. In a frying pan, sweat the shallots in olive oil, add the sausage meat, the ground veal and fry for a few minutes.
- Then add the breadcrumbs, the diced chorizo and the egg. Season and mix well.
- Stuff the saddles by spreading them out in front of you, place the stuffing in the middle and close tightly.
- Surround with a bard of bacon and tie tightly.
- Preheat your oven to 180°C. Place the saddles in a baking dish and put them in the oven for about 25 minutes.
