Grilled Chicken Thighs on Spicy Rice and Cashews

- 300 g Rice
- 1 Cinnamon stick
- 2 cardamom seeds
- 1 star anise
- 4 chicken thighs
- 1 onion
- 3 tbsp. tablespoons olive oil
- 1 tbsp. liquid honey
- 1 tbsp. 1/2 tsp Paprika
- 2 tbsp. tbsp Cashew nuts
- 2 tbsp. tablespoons Pine nuts
- Salt
- Pepper
- In a bowl, mix the liquid honey with the paprika, 2 tablespoons of olive oil, salt and pepper.
- Place your chicken thighs on a baking sheet covered with a sheet of silicone or baking paper. Brush them with your honey preparation.
- Bake at 200°C for 40 minutes.
- In a saucepan, cook the rice in salted water with the lightly crushed cardamom seeds, star anise and cinnamon stick, following the cooking time instructions on the package.
- Remove the first skin from your onion and chop it.
- Fry your onion in 1 tablespoon of oil with a little salt for about ten minutes, taking care to mix regularly.
- Mix the spiced rice with the sautéed onion.
- Color your pine nuts and cashews in a non-stick frying pan without fat over very high heat, taking care to stir constantly.
- Put the rice in a serving dish.
- Place your chicken thighs on this bed.
- Decorate the set with pine nuts and cashew nuts.
