
John Dory fillets with orange butter
Ingredients
Instructions
- 6 John Dory fillets
- 150 + 50 g Butter
- 2 shallots
- 2 oranges
- 2 tbsp. oil soup
- 3 tbsp. Flour
- Salt
- Brush the oranges under hot water.
- Take the zest and slice them, then squeeze the oranges.
- Immerse the zest three times in a row in boiling water, changing the water each time. Drain them and set aside.
- Peel and finely chop the shallots. In a saucepan with the oil, sweat them while stirring.
- Pour in the orange juice, bring to the boil and boil for 5 minutes.
- Filter the preparation and return the juice obtained to the saucepan.
- Add 150 g of very cold butter while whisking, then the orange zest. Reserve in a bain-marie.
- Flour the John Dory fillets.
- In a skillet with the remaining butter, brown the fillets for 5 minutes on each side. Serve hot, topped with sauce.
