- 1 Leg of 1.8 to 2 kg
- 50 g Butter
- 1 sprig of thyme
- 1 sprig of rosemary
- 2 sprigs of parsley
- 1 head of garlic
- 8 Tomatoes
- Salt
- Ground pepper
- Take the lamb out of the refrigerator at least 1 hour 30 minutes in advance, so that it returns to room temperature.
- Peel 2 or 3 cloves of garlic, split them, remove the green germ and prick the lamb.
- Preheat the oven to th. 8 or 9 (between 240 and 270°C).
- Rinse the tomatoes, dry them and cut them in a cross on the top.
- Chop the thyme. Wash the parsley and chop finely. Rinse the rosemary, separate the sprigs and chop them too.
- Mix the butter with the minced herbs. Add salt and pepper.
- As soon as the oven is very hot, place the lamb, fat side down, on a rack placed above the drip pan.
- Place in the oven and sear for 10 mins.
- Then remove the lamb from the oven and lower the thermostat to 6/7 (190°C).
- Coat the lamb with the flavored butter, using a spatula.
- Discard the fat that has fallen into the drip pan and place the lamb in it, this time fat side up.
- Surround the lamb with the lightly salted tomatoes.
- Add 10 cl of boiling water to the bottom of the dripping pan and return to the oven.
- Count 9 minutes of cooking time per pound for very rare meat, 10 minutes for a medium-rare leg and 13 minutes for it to be well cooked.
- Take into account the 10 min pre-cooking time in the total cooking time.
- Baste the lamb several times with its cooking juices.
- Once the lamb is cooked, turn off the oven and let the lamb rest for 10 minutes on the serving platter with the tomatoes, keeping the oven door ajar.
- Deglaze the cooking juices from the grill pan over high heat, adding a little water.
- Serve with the sauce on the side.
