Matcha tea puffs

- 100 g Butter
- 150 g Flour
- 1 tbsp. teaspoon Matcha tea
- 25 cl Water
- 110 g Powdered sugar
- 5 g Salt
- 7 Eggs
- 30 cl Matcha tea
- 30 g Matcha
- 50 cl Milk
- In a saucepan, heat the water with the sugar, salt and 100 g of butter cut into pieces.
- When the mixture boils, add 150 g of flour all at once and off the heat and mix vigorously with a spatula until a ball forms.
- Dry it over medium heat for about 30 seconds while stirring.
- Put the dough in the bowl of a stand mixer.
- Mix while adding 4 eggs as they are absorbed by the dough.
- Pocket your dough. Reserve in the refrigerator.
- In a saucepan, heat the milk. When it boils, add the matcha tea and let it steep.
- Beat 3 eggs with 100g of sugar until the mixture whitens.
- Add the flour while beating, then the milk.
- Put the preparation in a saucepan on the fire.
- Boil for 3 minutes, stirring constantly. Let cool to room temperature.
- Pour the preparation into a salad bowl, cover with film and store in the refrigerator for at least 1 hour.
- Place small mounds of dough on a baking sheet covered with a silicone sheet.
- Bake for 25 minutes at 180°C.
- Open the oven door to release the steam and continue cooking for another 5 minutes.
- Put your matcha tea cream in a piping bag.
- Make a small hole under your puffs and fill them with cream.
