Sauteed lobster with yellow wine and morels

- 4 frozen lobsters
- 20 dried morels
- 6 shallots
- 1 garlic clove
- 1 Bunch of chives
- 2 eggs
- 20 cl fresh cream
- 30 g Butter
- 1 bouquet garni
- 1 bottle of yellow wine (Jura)
- 4 tbsp. tablespoons Oil
- 0.5 tbsp. powdered sugar
- Salt
- Pepper
- Soak the morels in lukewarm water. Peel and chop the shallots and garlic.
- Cut the lobsters into sections, detach the claws keeping the shell.
- Heat 3 tbsp. tablespoons of oil in a fry pan and brown the lobster pieces evenly.
- Remove them from the skillet and keep warm.
- Add 1 tsp. tablespoons of oil in the fry pan and brown the shallots and garlic.
- For in the yellow wine and bring to a boil.
- Sprinkle with the morel soaking water, add the bouquet garni, salt, pepper, sugar.
- Bring to the boil again and reduce by half over high heat. Book covered.
- In a skillet, melt the butter and brown the drained morels, salt and pepper.
- In the fry pan, for 15 cl of fresh cream, mix with the wine sauce, then add the morels. Let simmer for 15 minutes over low heat.
- Place the lobster sections in a large saucepan, drizzle with a little wine sauce and cook over low heat for 5 minutes.
- Meanwhile, mix the two egg yolks with the remaining cream. Add this mixture to the wine sauce pan and stir.
- For everything over the lobster and heat without boiling.
- Arrange on a plate: divide the pieces of lobster, coat with wine sauce and morels and sprinkle with chopped chives.
- Serve immediately.
