Sonia Ezgulian’s Lemon Meatball Soup

- 300 g Ground beef
- 30 g Fine bulgur
- 1 large yellow onion
- 1 fresh onion
- 4 tender celery leaves
- 3 sprigs of cilantro
- 1 liter Chicken broth
- 1 tbsp. flour
- 30 g Basmati rice
- 1 egg
- 1 untreated lemon
- Salt
- Pepper
- In a salad bowl, mix the meat, bulgur, grated lemon zest, finely chopped yellow onion and coriander, 5 cl of water, salt and pepper.
- Mix well to mix all the ingredients well.
- Shape meatballs the size of cherries and place in a floured pie dish.
- Stir the dish briskly to evenly coat the dumplings with flour. Heat the broth, add the rice.
- After 10 min, lower the heat and add the meatballs. Cook for about 10 minutes then remove the pan from the heat.
- Beat the egg with the lemon juice, for it into the soup, mix. Sprinkle with the fresh onion and chopped celery leaves.
