
Spinach and feta butter

- 500 g fresh spinach
- 200 g feta
- 1 egg
- 1 onion
- Olive oil
- 2 tbsp. tablespoons sesame oil (optional)
- 3 tbsp. sesame seeds
- Salt
- Pepper
- 8 to 10 brick sheets
- 30 g melted butter
- Mince the onion. Heat a drizzle of olive oil in a large Dutch oven.
- Sauté the onion over medium heat. When translucent, add the spinach.
- Lower the heat if necessary (they release water but should not burn). Salt, pepper. Add sesame oil.
- In a bowl, crumble the feta. Crack the egg and mix with the feta.
- Once the spinach is cooked, remove the excess water which could soak the leaves. Drain them if necessary.
- Add the spinach to the salad bowl. Add sesame seeds and mix.
- Preheat the oven to 180°C.
- Cut the pastry sheets into half moons.
- Place a tablespoon of preparation on the edge of the sheet and make the triangular fold as for a samosa. Tighten well.
- Using a pastry brush, brush the beureks with melted butter on both sides.
- Arrange them on a baking sheet or aluminum foil and put them in the oven. Bake for 30 minutes at 180°C.
