
Chipolata Surprise Pizza

- 5 Chipolatas
- 1 Roll of pizza dough (approx. 250 g)
- 600 g Elongated tomatoes (roma, olivette)
- 1 tbsp. tablespoons olive oil (+ 1 teaspoon)
- 2 tbsp. tablespoons Thick tomato coulis
- 2 tbsp. tablespoon grated cheese
- 1 tbsp. coffee Shave of sugar
- 2 sprigs of thyme
- Salt
- Pepper
- Preheat the oven to 120°C (th. 4). Cut the tomatoes in 4 lengthwise. Remove the seeds.
- Place them on the baking sheet and drizzle with oil. Sprinkle with salt, sugar, pepper and crumbled thyme.
- Bake and let confit for about 1 hour. Let cool.
- Sear the chipolatas in an oiled frying pan, 4 min. Let them cool down.
- Unroll the dough and place the chipolatas around the edge 3 cm from the sides.
- Cut the dough every 3 cm approximately.
- Fold every other piece of dough towards the center, so as to partially cover the chipolatas (therefore so as to reveal the chipolatas in part).
- Cut out the remaining sides and keep them to shape mini-pizzas.
- Preheat the oven to 210°C (th. 7). Fill the center of the pizza with the coulis.
- Place tomato wedges on top and sprinkle with cheese. Bake for around 20 mins.
