FOR THE COOKIE:
- 100 g of flour
- 100 g sugar
- 50 g butter
- 3 eggs
FOR THE ORANGE JELLY:
- 3 oranges
- 150 g sugar
- 1 C. coffee agar agar
- 1 C. cinnamon
FOR THE CHOCOLATE GLAZE:
- 100 g of chocolate
- 10 cl of liquid cream
Prepare the jelly:
- Squeeze the oranges and for the juice into a saucepan. Add sugar, agar agar and cinnamon.
Boil for 5 mins. - For the preparation into a dish, preferably stainless steel, with edges and covered with parchment paper (to obtain a thick jelly).
- Leave to rest for 12 hours in the refrigerator.
Prepare the sponge cake:
- Preheat the oven th.5 (150°C).
- In a bowl, beat the eggs and sugar.
- Add the flour and melted butter.
- For the batter into a fairly large pan.
- Bake for 20 mins.
Prepare the frosting:
- Melt the chocolate in a bain-marie and add the liquid cream.
Do the assembly:
- Using a cookie cutter 7 cm in diameter, make circles of sponge cake.
- With a 5 cm cookie cutter, make circles of jelly.
- Layer the circles of jelly on the sponge cake then cover with chocolate.
- Leave to rest for 1 hour in the refrigerator.
