- 4 duck legs
- 4 garlic cloves
- 2 sprigs of thyme
- 1 jar of duck fat
- pepper and coarse salt
- Place the thighs in a dish and for coarse salt over them. Turn the thighs in the salt to coat them well.
- Add the thyme and the peeled and halved garlic cloves.
- Turn the thighs in several times and rub the ingredients over them to impregnate them well.
- Pepper. Film the dish and place it in the fridge for 24 hours.
- Take the dish out of the fridge and rinse the thighs thoroughly under running water.
- For the duck fat into a saucepan, then add the legs.
- They should be covered in fat. Simmer for 2½ hours.
- Serve immediately with salad and potatoes.
Express advice:
- You can of course use duck legs that you buy already confit.
- Get rid of the fat that surrounds them and brown them in the pan, skin side down.
- You can also reheat them in the oven at 180°C (th. 6) for around 15 minutes.
