- 4 fine fillets of coalfish (or if not cod) and boneless
- 33 cl of blond beer
- The same amount of fluid flour (you put the flour in the measuring cup and pour up to 33 cl)
- Salt and pepper
- 2 eggs
- 2 lemons
- A few sprigs of parsley
- French fries (as much as you like)
- Heat the deep fryer and sauté pan half filled with oil (on fairly high heat).
- Be careful with hot oil.
- Peel and cut your potatoes into fries.
- In a salad bowl, pour 33 cl of fluid flour, salt, pepper and 33 cl of blond beer. Add two egg yolks, mix.
- Beat the egg whites stiff with a pinch of salt. Mix the beaten egg whites with the preparation.
- When the oils are hot, take the fish fillets one by one and dip them in the flour then dip them in the batter, then in the pan full of oil (watch out for splashes).
- Cook your fries.
- When the fish is nicely browned on one side, flip it over.
- Serve the fish fillets with the fries, half a lemon and parsley. Salt the fries right out of the fryer.
- Add the sauces of your choice.
