
Frittata with Brussels sprouts and Parma ham
Ingredients

- 500 g Brussels sprouts
- 4 spring onions
- 8 Eggs
- 5 cl fresh cream
- 1 ball of mozzrella
- 2 tbsp. Butter
- 4 slices Parma ham
- Salt
- Pepper
- Cut the base of your Brussels sprouts then remove the first leaves. Cut them in 2.
- In an ovenproof skillet, brown the Brussels sprouts in the butter with a little salt over medium/high heat for 5 minutes.
- Add a little water, cover and continue cooking for 5 minutes.
- Remove the first skin from your new onions then slice them.
- In a bowl, whisk the eggs with the fresh cream, salt and pepper.
- Drain your mozzarella ball then cut it into slices.
- Remove the lid from your pan and let the water evaporate.
- Add the spring onions, eggs and mozzarella slices.
- Bake at 180°C for 15 minutes.
- Decorate the surface of your frittata with slices of Parma ham.
