Italian salad with pesto
Ingredients

- 4 peeled plum tomatoes
- 2 peeled avocados
- 120 g Mozzarella, diced
- 6 sun-dried tomatoes
- 120 g Yellow (and red) cherry tomatoes
- 1 Bunch of basil
- 1 tbsp. pine nuts
- 4 tbsp. tablespoons olive oil
- 25 g grated parmesan
- 1 garlic clove, peeled
- Salt
- Ground pepper
- Reserve a few basil leaves and put the rest of the bouquet in a blender with the garlic, pine nuts, parmesan and olive oil.
- Mix everything until you obtain a smooth and homogeneous pesto.
- Cut the olive tomatoes into rings, the cherry tomatoes in half, the dried tomatoes into pieces and the avocados into cubes.
- In a hollow dish, successively arrange the different tomatoes, the avocados and the mozzarella cubes. Add salt and pepper.
- Sprinkle generously with pesto and leave to cool for a few minutes.
- Just before serving, spread a few whole basil leaves over the salad and give a final turn of the pepper mill.
